Tomato Fennel Soup
I used to be really afraid of fennel. First off, it doesn’t look all that tasty- it’s kind of squirrely looking with it’s frilly fronds, and the bulb usually has a little dirt stuck in its ridges. Plus, at my grocery store at least, it’s with all of the “other” vegetables – cherimoya, romanesco, and chayote – the one’s you need to google in order to understand how to prepare them. Eggplant Cannelloni
We had an orphan’s Easter dinner yesterday. We invited friends that weren’t spending time with family to come over, bring a little something and have a relaxing dinner with friends, both old and new. We had an interesting table of Pimm’s cups, pea salad with saffron yogurt sauce, marinated flank steaks (both barbecue, and teriyaki), Asian cole slaw, cupcakes, and chocolate covered strawberries. One of my mom’s recipes that I’ve always loved is her chicken salad. Sugar Cookies Iced Your Way
For Valentine’s Day, for a couple years in elementary school, my mom would make sugar cookies cut into hearts. She would then mix an icing of a beautiful rosy pink.
