Healthiest Quiche Lorraine
Just in time for the weekend. I love quiche lorraine. It has to be my favorite quiche of all time. With smoky bacon mixed with sweet caramelized onions and nutty gruyere cheese, and usually a flaky crust packed full of butter making for the perfect meal.

However, it my unending pursuit of making my favorite dishes healthier, I thought I would try to find a less guilty way to indulge my quiche craving.
Subbing in some egg substitute, fat-free cottage cheese (which I usually strongly dislike, however this works quite well and doesn’t have the cottage-ness once baked), and removing the crust entirely, I have somehow made a Sunday favorite into a healthy anytime meal.
Healthiest Quiche Lorraine
Inspired from Cooking Light
Ingredients
1 1/2 cups egg substitute
3 large eggs
1 1/2 cups of gruyere cheese
1/2 cup 1% low-fat milk
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 (16-ounce) carton fat-free cottage cheese
Cooking spray
5 slices of thick cut smoked bacon, sliced and rendered
1 large vidalia onion, caramelized
Instructions
Preheat oven to 400 degrees.
Beat the egg substitute and eggs in a large bowl until fluffy. Add the cheese, milk, flour, baking powder, salt, and cottage cheese.
Heat a large nonstick skillet over medium-high heat and render off the smoked bacon.
In the same skillet, caramelize the onion.
Add the bacon and onion to egg mixture.
Pour the mixture into a 3-quart casserole dish coated with cooking spray.
Bake at 400 degrees for 15 minutes. Reduce the oven temperature to 350 degrees (do not remove dish from oven), and bake for 35 minutes or until lightly browned and set.
